A Taste of Summer: Sweet & Tangy Squash Relish from Allman Farms

There’s a certain rhythm to summer in Oneonta. It’s in the music floating through the streets during the City Night Market, the hum of conversation between neighbors, and the scent of something good simmering in the kitchen. At the heart of it all? Local food that tells a story - grown, picked, and prepared with care.

One of those stories starts with Allman Farms & Orchards. This fourth-generation family farm brings more than just produce to the table. They bring tradition. You’ll find them at the Night Market with crates of colorful vegetables and friendly faces ready to share what’s in season.

For June, it’s all about squash. Zucchini and yellow squash are in abundance, and if you're wondering what to do with it all, Allman Farms has an answer: Summer Squash Relish.

This sweet and tangy relish is a Southern classic and the kind of thing your grandmother might have kept in her fridge all season long. Spoon it over grilled hot dogs or burgers, tuck it into sandwiches, or just enjoy it as a bright little side dish. However you use it, it’s a jar full of sunshine.

Summer Squash Relish

What You’ll Need:

  • 10 cups chopped zucchini and yellow squash

  • 1 large onion, chopped

  • 1 red bell pepper, chopped

  • 1 green bell pepper, chopped

  • 2 cups apple cider vinegar

  • 2 ½ cups granulated sugar

  • 2 tsp mustard seed

  • 2 tsp celery seed

  • 2 tsp ground cinnamon

  • 2 tsp turmeric

  • 1 tsp pickling salt

This recipe brings together bold spices and bright veggies into a preserve that’s as beautiful as it is flavorful. It’s also a great way to use up an abundance of squash and yes, Allman Farms has plenty.

Pick up your ingredients at the next Oneonta City Night Market on June 28, and try your hand at making this summer staple. If you’re new to canning or just looking to shake up your summer menu, this relish is a great place to start.

Come for the music, stay for the squash, and leave with something delicious.
